Beetroot, Feta and Sunflower Seed Salad

Serves 4

518 Calories, 14.7g of protein, 5.5g fibre per serving

Delicious served with a rocket salad and dressing

Ingredients

6 beetroots
150g Feta cheese crumbled
150g Kelkin Sunflower seeds
2 grapefruit peeled and split into segments

Dressing

30 mls of Balsamic Vinegar
70 mls of olive oil
20 mls of Kelkin Orange Juice

Method

Pre-heat oven to 180’C

Place the sunflower seeds on a baking tray and toast for 5-7 minutes in the oven until golden.

Chop your beetroot into bite-sized pieces

Crumble over the feta cheese

Sprinkle the pumpkin seeds over the salad

Top with salad dressing and serve with some rocket salad.
