Kelkin Green Split Pea and Vegetable Casserole
INGREDIENTS:
- 12 oz of Kelkin Green Spilt Peas.
- 2 carrots, sliced.
- 3 oz of Barley.
- 2 potatoes, sliced.
- 2 Pints of stock.
- 1 clove of garlic, crushed.
- 3 tsp of olive oil.
- 4 tomatoes, skinned & chopped.
- 3 Sticks of celery, chopped.
- Sea salt and freshly ground black pepper.
METHOD:
- Place the split peas, barley and stock into a pan and bring to the boil.
- Simmer for 1 hr.
- Heat the oil in a flameproof casserole dish and add the celery, onion, carrots, potatoes and garlic.
- Fry for 3 minutes.
- Add the tomatoes and seasoning, then pour over the stock with the peas and barley.
- Transfer to a moderate oven (180°C) for 1 hour.
