Kelkin Green Split Pea and Vegetable Casserole

INGREDIENTS:



  1. 12 oz of Kelkin Green Spilt Peas.
  2. 2 carrots, sliced.
  3. 3 oz of Barley.
  4. 2 potatoes, sliced.
  5. 2 Pints of stock.
  6. 1 clove of garlic, crushed.
  7. 3 tsp of olive oil.
  8. 4 tomatoes, skinned & chopped.
  9. 3 Sticks of celery, chopped.
  10. Sea salt and freshly ground black pepper.

METHOD:



  1. Place the split peas, barley and stock into a pan and bring to the boil.
  2. Simmer for 1 hr.
  3. Heat the oil in a flameproof casserole dish and add the celery, onion, carrots, potatoes and garlic.
  4. Fry for 3 minutes.
  5. Add the tomatoes and seasoning, then pour over the stock with the peas and barley.
  6. Transfer to a moderate oven (180°C) for 1 hour.
